Colour is never a shortcut

Behind every hue of the Colors collection there is a gesture. Our bartenders work the house syrups, press the citrus to order and measure to the gram so that the colour of the glass is the colour of the taste — never a mere effect.

Tell us what you like — bright and tart, or round and enveloping — and we steer you to the right hue. That consistency, glass after glass, has earned Le Caribou a place among France's best cocktail bars.

The collection unfolds from the first glass to the last

At the apéro, under the pergola of place Thiars, you often start with a fresh hue — a green or a pink — facing the Vieux-Port as it comes alive. This is the gentle window, a first drink that stretches on, unhurried.

Then the evening builds and the colours follow: the deep reds and ambers come out, the counter livens up and the collection reaches its full scale. The bar stays open well after the kitchen — plenty of time to run through the swatch card into the small hours.
